Arugula meatballs are my latest experiment in vegetable-based meatballs. To vary from the usual and make them a little lighter, I have not added eggs to the dough, so you will have to turn them with a little caution during cooking, so as not to break them. The result? Delicate, very soft meatballs that melt in your mouth! I prepared them using cheddar that I had in the fridge, but you can replace it with asiago, fontina, provolone … the choice is yours!

  • Doses for 4 people:
  • 150 gr of bread
  • 100 gr of rocket
  • 1 clove of garlic (optional)
  • 100 gr of cheese
  • salt
  • 2 tablespoons of extra virgin olive oil
  • bread crumbs
  • Seed oil for frying

Method

How to make arugula meatballs

Soak the bread in hot water, then squeeze and crumble it.
Wash the rocket well and cut it.

Add the rocket, the chopped cheese, the finely chopped garlic, salt and olive oil to the bowl and mix everything.

With wet hands, form the meatballs (about 20 came out of it).
Pass them in the breadcrumbs, then cook them in a pan with already hot oil, turning them to brown them evenly (alternatively, cook them on a baking sheet lined with parchment paper, after having sprinkled them with a little oil, for about 20 minutes at 200 °, fan oven already hot).
Once ready, lift them with a slotted spoon and let them dry on kitchen paper.

The arugula meatballs are ready, serve hot or warm.
