Caper fritters are an original idea to bring a delicious appetizer or appetizer to your tables. You can prepare them as I did, with the basic recipe, or opt for one of the many possible variants: capers and anchovies, olives and capers, capers and potatoes, capers and tomatoes … The only difficulty to prepare them will be to find the fresh capers, widespread especially in Sicily in the summer months, but if you do not find them or have decided to prepare this recipe in another period, you can do like me and use those in salt, obviously making sure to rinse them very well, until you completely remove every salt residue. The taste won’t be quite the same, but the result will be equally delicious!

  • Servings for about 20 pancakes:
  • 200 gr of capers
  • 2 eggs
  • 150 gr of flour 00
  • 200 ml of milk
  • 1 pinch of salt
  • Seed oil for frying

Method

How to make caper fritters

Start by preparing the batter: divide the yolks and egg whites and whip them with firm snow.

In another bowl, beat the egg yolks with the milk, then add salt and flour and mix.
Finally add the egg whites, stirring gently so as not to disassemble the batter.

Desalinate the capers completely and add them to the egg mixture.
If you have fresh capers, be sure to remove the stalk and rinse them under running water before adding them.

Start frying the pancakes by spoonfuls in hot oil, turning them over to brown them evenly.

As they are ready, drain the caper fritters well and dry them with kitchen paper, then serve immediately.
