Preparing fonzies at home is the latest idea that came to my mind on the fake author theme. To make my fonzies I searched a bit on the internet studying the recipes proposed on the various sites, in the end I made a mix with the material found and this is the result.
So, as we smell it, the taste is also close, but the consistency … no, they are not so crunchy, and perhaps this is due to the use of the potato instead of the freeze-dried potato. Well, however they taste closer and are good to the point of being divided in a matter of minutes, so here is the recipe, if you bring them to the table for an aperitif or as a delicacy to eat comfortably sitting on the sofa while watching TV , they are perfect;) Then prepare the homemade Fonzies and enjoy!

  • Servings per 1 tray:
  • 125 gr of potatoes
  • 25 gr of potato starch
  • 100 gr of semolina
  • 120 ml of water
  • 1 tablespoon of extra virgin olive oil
  • 40 gr of pecorino
  • 30 gr of parmesan
  • 1 teaspoon of instant yeast
  • 1 teaspoon salt
  • 1 teaspoon of sugar
  • 60 gr of extra parmesan
  • extravirgin olive oil
(100 ml = 3.4 fluid oz. – 100 grams = 3.5 ounces – 1 liter = 34 fluid oz. – 1 kilogram = 2.205 pounds – 100C° 212F° – 180C° 356F°)

Method

How to make homemade fonzies

Start by boiling the potatoes in a pan with the water.
Press them with a potato masher and collect the puree in a bowl.
Add starch, semolina flour and water.

After mixing everything, add salt, sugar, cheese, yeast and mix.

At this point put the oil and form a ball with an elastic and sticky mixture.

Cover with plastic wrap and let it rest for 30 minutes.

Wet your fingers with oil or flour to work the rolled strips.
Then bread them with Parmesan.

Transfer them to a baking tray with parchment paper and wet them with a drizzle of oil.
Then bake in the oven at 200 ° C for 15-20 minutes.

As soon as they come out of the oven, cover the homemade fonzies with Parmesan again, then leave to cool and serve.
