Linzer biscuits are a real delight, a miniature version of the much more well-known linzer torte, the delicious Austrian dessert that you all know;) In short, these are crumbly Austrian biscuits based on a shortbread flavored with almonds and cinnamon, filled with raspberry jam and decorated with a shower of icing sugar … in short, a recipe definitely worth trying, do you think?
I tasted linzer cookies for the first time, South Tyrol, during the Christmas holidays and I fell in love with them, and I assure you that once you are prepared you will want to make them and make them again;)
- Doses for 15 biscuits:
- for cookies
- 130 gr of 00 flour
- 115 gr of butter
- 70 gr of almond flour
- 70 gr of brown sugar
- 1 yolk
- 1/2 teaspoon of vanilla essence
- 1/2 lemon (grated peel
- 1 pinch of cinnamon
- 1 pinch of salt
- 1 pinch of baking powder
- to garnish
- Raspberry Jam
- icing sugar
- preparation: 35 min
- cooking: 15 min
- total: 50 min + 2 hours in the fridge
How to make Linzer cookies
First prepare the pastry: work the butter and sugar until creamy, then add the yolk.
Incorporate also the flours, the yeast, the salt and the aromas and work quickly until you obtain a homogeneous dough.
Cover with cling film and leave to rest in the fridge for 2 hours.
Take the dough again, roll it out on a floured surface in a sheet of about 3 mm and cut 30 circles of 5 cm in diameter.
On half of the circles engrave a small star in the center.
Place the biscuits on the baking tray lined with parchment paper and bake for about 12-15 minutes (or until the edges are golden) in a preheated oven heated to 180 ° C, then take out of the oven and leave to cool.
Stuff the whole biscuits with jam, decorate the ones drilled with icing sugar, then add the 2 biscuits, so that the jam can be clearly seen from the star.
Linzer biscuits are ready, you just have to enjoy them.
