Potato and pea burgers are a delicious vegetarian main course. The preparation times are a bit long because you have to cook the potatoes, but if by chance there are some boiled potatoes left over for other recipes, these vegetarian burgers are really perfect to consume them, and you will shorten the time. If you want you can try to prepare them even without egg, like my veggie burger, in order to obtain even lighter burgers, but in that case remember that they will be much more delicate: especially in that case, I recommend you prepare them with yellow-fleshed potatoes , such as those with red skin, less watery and therefore more suitable for these preparations. Attention however to cooking: use a good non-stick pan and turn them with great care. I’ll leave you with the recipe and we’ll read later: *

  • Servings for 6 burgers:
  • 200 gr of fresh peas, already shelled
  • 400 gr of potatoes
  • 1 egg
  • 2 tablespoons of grated parmesan
  • 1 tablespoon of breadcrumbs (optional)
  • mint
  • salt
  • pepper
  • extravirgin olive oil
(100 ml = 3.4 fluid oz. – 100 grams = 3.5 ounces – 1 liter = 34 fluid oz. – 1 kilogram = 2.205 pounds – 100C° 212F° – 180C° 356F°)

Method

How to make potato and pea burgers

First wash the potatoes, put them in cold water and boil them (with the peel) for about 35 minutes from boiling (or until they are well cooked: test the cooking with the prongs of a fork), then drain and peel them, mash them and leave them cool.

In the meantime, when the potatoes are cooking, boil the peas too (it will only take a few minutes), then sauté them in a pan with a little oil and at the end of the cooking, add salt.

Add the mashed and lukewarm potatoes in a bowl, the peas also warmed, egg, cheese, mint, salt and pepper and mix, trying not to crush the peas.
If the mixture is too soft, add 1 tablespoon of breadcrumbs.

Divide the mixture into 6 equal parts and gently compact each part of the mixture into an 8 cm coppapasta to create the burgers.
Cook over medium heat for a few minutes on each side (until golden brown) in a non-stick pan greased with a little oil, turning them gently with a spatula.

The potato and pea burgers are ready, serve them immediately.
