Apple plumcake is a recipe that, strange but true, was still missing from my blog. With the passion I have for sweets in general and apple pies in particular, one would think that I have tried them all by now … But no, there is always something new to experience;) So here I am, with a recipe of the good ones good, but really good! In addition, it also has the particularity of sliced ​​apples that take the full height of the plumcake.
A light dessert (there is no butter, no oil), moist and soft, perfect for breakfast or to accompany afternoon tea, but which you can also serve as a dessert, perhaps ennobling it with a scoop of ice cream or a little warm english cream. In short, I leave you this very simple apple plumcake recipe, which you can customize by adding spices or dried fruit, a sprinkling of cinnamon, you let me know what you think;)

  • Doses for 1 mold of 28×10 cm:
  • 2 apples
  • 2 eggs
  • 150 g of sugar
  • 250 gr of Greek yogurt
  • 200 gr of whole wheat flour
  • 1 sachet of baking powder
(100 ml = 3.4 fluid oz. – 100 grams = 3.5 ounces – 1 liter = 34 fluid oz. – 1 kilogram = 2.205 pounds – 100C° 212F° – 180C° 356F°)
  • preparation: 30 min
  • cooking: 40 min
  • total: 1 hour and 10 min

Method

How to make apple plumcake

First wash the apples well (if you prefer you can peel them, I decided to keep the peel) and cut them into very thin slices, removing the central part of the core.

Work the eggs with yogurt and sugar, then add the flour mixed with the yeast and mix until a homogeneous mixture is obtained.

Pour the mixture into the mold lined with parchment paper and level the surface, then set the apple slices in the mixture, one after the other.
Bake for 35-40 minutes at 160 ° C, in a preheated convection oven.

The apple plumcake is ready, at least let it cool (if you can) before cutting it into slices and serving it.
