The blueberry tart is a blueberry tart prepared with a shortcrust pastry shell, a sour cream cream and many blueberries. The recipe dates back to this winter but had gone by the wayside, it is a reinterpretation of a recipe by Martha stewart and I found it delicious, all the flavors blend very well and the cream makes a nice contrast with the slightly pungent taste of the blueberries.   • Ingredients for a 24 cm mold:
  • 100 gr of butter
  • 80 gr of icing sugar
  • 140 g of 00 flour
  • 60 gr of cornstarch
  • 1 egg
  • 1 pinch of salt
  • 1 sachet of vanillin
  • 1 teaspoon of baking powder
  • For the cream:
  • 170 gr of fresh cream
  • 170 gr of Greek yogurt
  • 1 tbsp lemon juice
  • 1 egg
  • 60 gr of icing sugar
  • 1 sachet of vanillin
  • 100 gr of blueberries
(100 ml = 3.4 fluid oz. – 100 grams = 3.5 ounces – 1 liter = 34 fluid oz. – 1 kilogram = 2.205 pounds – 100C° 212F° – 180C° 356F°)
  • preparation: 30 min
  • cooking: 40 min
  • total: 1 hour and 10 min + 1 hour in the fridge

Method

How to make blueberry tart

Prepare the shortcrust pastry by placing the flour, cornstarch, sugar, butter cut into pieces, vanillin, salt and baking powder in a bowl.

After obtaining a crumbly dough, add the egg

Knead until all the ingredients are tied together

Form a ball with the dough, wrap in plastic wrap and leave to rest in the fridge for 1 hour

In the meantime, prepare the sour cream
Mix the yogurt with the cream and lemon juice

Leave to rest for half an hour

Then add the icing sugar, egg and vanilla to the sour cream thus obtained.

Work until a smooth cream is obtained

Slightly flatten the dough, put it on a surface between two sheets of baking paper

Roll out with a rolling pin until you get a sheet of about 3 mm

Lift and line a buttered and floured tart mold

Pour the cream inside then add the washed blueberries

Bake the blueberry tart in a preheated oven at 180 degrees for 40 minutes

Let the blueberry tart cool before slicing and serving
