The term “Cordon Bleu” is used by many cooking schools to define prestigious haute cuisine dishes. In Italy, on the other hand, this terminology more commonly identifies a chicken cutlet stuffed with ham and cheese.
Although cordon bleu are one of the best selling products in the supermarket counters in my house, they have always been banned. My mom always prepared them at home, she made large quantities and freezed them after the breading, so we had an excellent dinner saver always at hand in the freezer. Needless to say, the taste of homemade ones is another story and since they are so easy to make, why not try them? After tasting the home made ones I assure you that you will never buy a packaged chicken cordon bleu again;) If you want to avoid frying, you can also bake them in the oven, it will take 20 minutes in the oven already hot at 200 ° to have a dish a little more light;)

  • Ingredients for 4 Cordon bleu:
  • 4 slices of chicken breast
  • 80 gr of cooked ham
  • 4 slices of cheese
  • 1 egg
  • bread crumbs
  • seed oil
  • salt

Method

How to make Cordon bleu

Beat the chicken breast slices with a meat pounder.

Fill each slice with a little cooked ham and a slice of provolone, spreading it over half the slice of chicken and leaving the edges free.

Close the meat in your wallet.

Beat the egg on a plate with a little salt
Pass the cordon bleu first in the beaten egg and then in a plate with the breadcrumbs.

When you bread them, make sure that the edges are perfectly sealed so as to prevent the filling from spilling out during cooking

Fry the cordon bleu in plenty of hot oil, making sure that it is not excessively hot, otherwise the breading is burned and the cordon bleu remains raw.

Brown them on one side and then turn them over and cook on the other side, it will take about 10 minutes in total.

Once ready, put them on a plate lined with paper towels, then serve the warm cordon bleu
