Eggplant Sweet & Sour

Sweet and sour eggplants are a tasty and tasty vegetable side dish. After frying the aubergines in a pan, just add them to vinegar, sugar, salt, mint and pepper, mix everything et-voilà, your sweet and sour preparation will be ready! I started to appreciate this semi sweet taste only a few years ago, in my home these preparations were not very fashionable and my palate was therefore not trained in these flavors. Luckily the blog gave me the opportunity to explore the kitchen on several fronts and now the sweet and sour vegetables are among my favorite side dishes;) So my recipe is you and happy Sunday!

  • Doses for 4 people:
  • 1 kg of aubergines
  • 40 ml of vinegar
  • 40 gr of sugar
  • mint
  • 1 clove of garlic
  • seed oil
  • salt
  • pepper
(100 ml = 3.4 fluid oz. – 100 grams = 3.5 ounces – 1 liter = 34 fluid oz. – 1 kilogram = 2.205 pounds – 100C° 212F° – 180C° 356F°)

  • cooking: 20 min
  • total: 35 min

Method

How to make sweet and sour eggplants

Wash and dry the aubergines.
Cut them first into slices and then into thick strips.

In a large pan fry the garlic in the oil.
Once fried, lift it and put the aubergines a little at a time.
Cook them until golden brown and transfer them to a small bowl.

Now add the sugar, salt, pepper, mint and vinegar to the still boiling aubergines.
Mix the ingredients thoroughly.

Your sweet and sour eggplants are ready.
