The mayonnaise cake is the sweet with secret ingredient that I proposed to you last week as a quiz on Instagram, always giving away one of my misyani kits. You gave me the most disparate answers, from aloe vera to lard, from bicarbonate to avocado, but in the end a girl guessed it: mayonnaise! Already some time ago I had tried a recipe that included this ingredient for cooking biscuits. This time I wanted to try to prepare a cake: the result of this strange recipe is a fantastic dessert, very soft and with a fresh lemon scent.

  • Doses for 1 24 cm mold:
  • 3 eggs
  • 200 grams of sugar
  • 180 gr of mayonnaise
  • 200 ml of milk
  • 320 gr of 00 flour
  • 1 sachet of baking powder
  • 1 lemon (grated peel)
  • 1 pinch of salt
(100 ml = 3.4 fluid oz. – 100 grams = 3.5 ounces – 1 liter = 34 fluid oz. – 1 kilogram = 2.205 pounds – 100C° 212F° – 180C° 356F°)

  • cooking: 45 min

Method

How to make mayonnaise cake

In a large bowl, whisk the eggs with the sugar for at least 10 minutes: they will have to triple in volume.
Then add the milk flush, continuing to whip. Incorporate also the sifted flour and baking powder, salt and finally mayonnaise and lemon peel.

Pour the mixture into a mold lined with parchment paper, then bake in a preheated static oven at 180 ° C and cook for about 45 minutes.

The mayonnaise cake is ready: let it cool before cutting into slices and serving.
