Potato salad with tzatziki

This potato salad with tzatziki is one of my favorite salads. Potatoes seasoned with tzatziki, a yogurt sauce typical of Greece, become an ideal dish to serve both as a single dish and as a side dish. The potato salad with tzatziki is a fresh and light dish, which in these times is really ideal to bring to the table 🙂

  • Ingredients for 4 people:
  • 600 gr of potatoes
  • 250 gr of Greek yogurt
  • 2 cucumbers
  • 2 cloves of garlic
  • 1 mint bundle
  • 2 tablespoons of extra virgin olive oil
  • salt
  • pepper
(100 ml = 3.4 fluid oz. – 100 grams = 3.5 ounces – 1 liter = 34 fluid oz. – 1 kilogram = 2.205 pounds – 100C° 212F° – 180C° 356F°)

Method

How to make potato salad with tzatziki

Boil the potatoes in abundant salted water.
In the meantime, grate the cucumbers (I made one part grated, and the other in small pieces), washed but not peeled. Sprinkle the cucumbers with the salt and leave them in a colander to drain for at least an hour.

Peel and chop the garlic.
Then add the pieces of cucumber, with the chopped garlic, the mint leaves (also chopped), salt, pepper and a spoonful of oil.
Now add the spoonfuls of yogurt, until you get a creamy but thick mixture.

Leave the tzatziki to rest in the fridge for at least an hour in order to make the various flavors bind well together.

Peel the potatoes, cut them into cubes and let them cool.

Combine the potatoes with the tzatziki and leave to rest in the refrigerator for at least an hour before serving.

Serve the potato salad with tzatziki with cucumber slices and a sprig of mint.
