Puzzle cookies are a very cute, romantic but original idea for Valentine’s Day. These are crumbly shortbread biscuits, which I cut out using a pair of cute little heart-shaped molds with puzzle-like interlocking. If you do not have my own molds, you can simply use a heart-shaped mold and create the division yourself with the blade of a knife. I chose to use a classic pastry and then to decorate my biscuits with sugar paste, but if you want you can opt instead for a flavored pastry and you can vary the decoration with colored icing or melted chocolate, or even leave the cookies if you prefer, or decorate them by writing something on them … In short, free your imagination and let me know what solution you have opted for!
PS: a little tip … you can take advantage of the idea of ​​heart-shaped puzzle cookies also to create different shapes and entertain your children!

  • Doses for 1 tray of biscuits:
  • for the pastry
  • 300 gr of 00 flour
  • 2 eggs
  • 100 gr of sugar
  • 100 gr of butter
  • 1 lemon (grated peel)
  • 1 pinch of baking soda
  • to decorate
  • 300 gr of sugar paste
  • 50 gr of icing sugar
  • 1 spoonful of water
  • heart-shaped sprinkles

Method

How to make puzzle cookies

Arrange the flour and add all the ingredients for the pastry to the center: sugar, eggs, diced butter, grated peel and baking soda.

Quickly mix the ingredients until the dough is compacted, then cover with cling film and leave to rest in the fridge for at least 30-60 minutes.

Pick up the pastry, roll it out with a rolling pin and cut out the half hearts and the pieces of the puzzle

As they are ready, place them on a baking sheet covered with parchment paper.
Bake the biscuits in a preheated convection oven at 180 ° C for about 15 minutes or until the edges begin to brown. Then take it out of the oven and let it cool.

Roll out the sugar paste into a thin sheet and cut the half hearts with the same shapes used to make the biscuits.

Prepare the icing with water and brush the biscuits and then attach the sugar paste decorations.

With the remaining frosting, attach the sugar hearts: when the frosting is dry, the puzzle cookies will be ready.
