Salad meat is a simple, light and tasty second course. I accompanied the boiled meat with confit cherry tomatoes, cheese, songino and spring onions, but you can personalize it by changing aromas and vegetables, for example. You can even turn this salad meat into a complete dish by adding a portion of potatoes or a few slices of bread, for example. In this case I prepared the dish from scratch, but you can also take advantage of this recipe as a recycling idea after preparing meat broth, to say;)
In any case, we liked the beef salad very much, a fresh and pleasant dish in all seasons, in my opinion!

  • Doses for 4 people:
  • 600 gr of baby walker
  • 1 carrot
  • 1/2 onion
  • 15 cherry tomatoes
  • 100 gr of pickles (spring onions)
  • salt
  • 100 gr of songino
  • 80 gr of provolone
  • sugar
  • Origan
  • extravirgin olive oil
  • balsamic vinegar
  • parsley
  • 1 tbsp pesto
  • pepper (beans and ground)

Method

How to make salad meat

Clean the onion and carrot and put them in a large pot together with the meat and a little salt and pepper in grains.
Cover with plenty of cold water, put on the fire and cook for 1 hour starting from boiling.

Wash the cherry tomatoes, cut them in half, then put them on a baking sheet (with the cut part facing upwards), season with salt, oregano, oil and a pinch of sugar and cook for about 20 minutes at 200 ° C (alternatively you can cook them for about 10 minutes in the microwave at 800W).

Once ready, drain the meat, fray it and put it in a bowl with the songino, the cherry tomatoes, the sliced ​​cheese and the onions.
Season with pesto, balsamic vinegar, salt, pepper and a little oil if necessary.

the salad meat is ready and you just have to serve it.
